Recipe
YUMMY BROWNIES
1 cup soft tofu
2 cups whole wheat flour
scant 2/3 cup pure water
2 tsp. vanilla extract
1 cup carob powder
2/3 cup fructose
1 cup walnuts
1 tsp. baking powder (non-alum)
- Preheat over to 350 degrees F. Grease a 9x9 pan.
- In blender, puree tofu. Set aside.
- In a small saucepan, mix 1/3 cup of flour with water until a smooth consistency.
- Add tofu puree.
- Cook over moderate heat, stirring occasionally, for 3 minutes.
- Place mixture in a large bowl. Let cool.
- In separate bowl, add fructose, carob powder, baking powder.
- Add to tofu mixture.
- Add vanilla and stir.
- Gradually mix in rest of flour.
- Fold in walnuts.
- Pour into prepared pan. Cook 25 minutes or until done and top springs back after touching.

Tofu - a soybean curd. A source of cholesterol free protein. Tofu is low in fat, contains calcium, phosphorus, iron and B vitamins as well as protein. Use tofu in moderation. Buy only organic.
Carob Powder - ground from the pods of the carob tree. Contains no caffeine or theobromine (the stimulants found in cocoa).Rich in nutrients such as vitamin A, B, and calcium. Contains potassium, phosphorous, magnesium, silicon and iron. Rich in sugar - high in fibre - low in sodium and fat. Use equal amounts of powder as cocoa - or use 3 tbsp powder and 2 tbsps water in place of 1 square of chocolate.
Baking Powder - buy baking powder (gluten free) from health food store to ensure there is no aluminum content. Or - make your own: 3 TBSP baking soda, 6 TBSP cream of tartar and 6 TBSP arrowroot powder. Store in covered jar.
